Here is an original Finnish M\u00e4mmi recipe with instructions for you from <a href=\"https:\/\/laihianmallas.fi\/reseptit\/jalkiruoka\/6231-perinteinen-kotimammi\/\">Laihian Mallas<\/a>.  <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Have fun and enjoy the traditional Finnish Easter speciality! Yep, this Easter season you can also get M\u00e4mmi at the <a href=\"https:\/\/littlefinland.de\/de\/content\/16-shop-cafe-in-hanau\">Little Finland Hanau store and cafe<\/a>!<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><br>PERINTEINEN KOTIM\u00c4MMI &#8211; TRADITIONAL HOMEMADE M\u00c4MMI<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><br>INGREDIENTS:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1. PHASE<br>1 1\/2 liters of water<br>250 g (3 dl) pint of <a href=\"https:\/\/littlefinland.de\/de\/cerealien-mehl-nudeln\/2788-laihian-mallas-tuoppi-maemmi-ja-leipaemallas-helles-gemahlenes-roggenmalz-1kg.html\">malt flour<\/a> (1 dl = 85 g)<br>500 g (9 dl) <a href=\"https:\/\/littlefinland.de\/de\/cerealien-mehl-nudeln\/3000-myllyn-paras-ruisjauho-vollkorn-roggenmehl-1kg.html\">rye flour<\/a> (1 dl = 55 g)<br><br><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2. PHASE<br>2 liters of water<br>250 g (3 dl) pint of malt flour (1 dl = 85 g)<br>500 g (9 dl) rye flour (1 dl = 55 g)<br><br><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">PHASE 3<br>1 &#8211; 2 dl syrup (available in Little Finland Hanau)<br>2 tablespoons ground bitter orange peel<br>1 teaspoon salt<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">AN<br>Sugar water (1 dl water \/ 1\/2 dl sugar)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><br>INSTRUCTIONS:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1. PHASE<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Heat the water to 60 &#8211; 65 \u00b0C.<br>Mix malt and rye flour with water. Sprinkle a little rye flour on the surface. Cover the pot with a lid. Soak for 1 \u00bd to 2 hours in a warm place, e.g., 50 &#8211; 55 \u00b0C in an oven or in a basin in a water bath, e.g., in a kitchen sink (add hot water to the basin enough times to keep the mixture to be soaked at soaking temperature). The mixture becomes thinner when stirred. Note! From time to time, measure the temperature of the mixture with a food thermometer, which should be 50 &#8211; 55 \u00b0C.<br>A good aid for checking the oven temperature is a separate oven thermometer.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2. PHASE<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Heat the water until it bubbles and add to the pot.<br>Mix in malt and rye flour. Leave a pinch of flour on the surface. Cover the pot with a lid. After a few hours, continue as described above.<br><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">PHASE 3<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Now the mass should be loose. Cook the mixture for 10 minutes, stirring constantly and making sure that the bottom does not burn. Taste it.<br>Cook for another 5 minutes. Cool the mixture until it is lukewarm. Spread m\u00e4mmi on m\u00e4mmi, aluminum or baking pans. Leave about \u00bc of the ladle height a foam clearance. Add 1-2 tablespoons of cold sugar water to the top of the cake pans to prevent release. Bake on bottom rack in oven at 150 degrees for about 2 \u00bd hours.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">M\u00e4mmi will taste best in a few days. Serve cold with cream, cream milk, custard or ice cream.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">TIP: You can omit the syrup, then the M\u00e4mmi is not so sweet.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">BONUS! When you have chosen your favorite Finnish delicacies or other products and go to the till in Hanau shop, say the Finnish word \u201cBLOGILUKIJAYLL\u00c4RI\u201d in Finnish to Annika. Now you have definitely deserved a free cup of delicious Finnish coffee!
