Original recipe of Mämmi – the beloved and hated Finnish Easter specialty!

PERINTEINEN KOTIMÄMMI – TRADITIONAL HOMEMADE MÄMMI
INGREDIENTS:
1. PHASE
1 1/2 liters of water
250 g (3 dl) pint of malt flour (1 dl = 85 g)
500 g (9 dl) rye flour (1 dl = 55 g)
2. PHASE
2 liters of water
250 g (3 dl) pint of malt flour (1 dl = 85 g)
500 g (9 dl) rye flour (1 dl = 55 g)
PHASE 3
1 – 2 dl syrup (available in Little Finland Hanau)
2 tablespoons ground bitter orange peel
1 teaspoon salt

Sugar water (1 dl water / 1/2 dl sugar)
INSTRUCTIONS:
1. PHASE
Heat the water to 60 – 65 °C.
Mix malt and rye flour with water. Sprinkle a little rye flour on the surface. Cover the pot with a lid. Soak for 1 ½ to 2 hours in a warm place, e.g., 50 – 55 °C in an oven or in a basin in a water bath, e.g., in a kitchen sink (add hot water to the basin enough times to keep the mixture to be soaked at soaking temperature). The mixture becomes thinner when stirred. Note! From time to time, measure the temperature of the mixture with a food thermometer, which should be 50 – 55 °C.
A good aid for checking the oven temperature is a separate oven thermometer.
2. PHASE
Heat the water until it bubbles and add to the pot.
Mix in malt and rye flour. Leave a pinch of flour on the surface. Cover the pot with a lid. After a few hours, continue as described above.
PHASE 3
Now the mass should be loose. Cook the mixture for 10 minutes, stirring constantly and making sure that the bottom does not burn. Taste it.
Cook for another 5 minutes. Cool the mixture until it is lukewarm. Spread mämmi on mämmi, aluminum or baking pans. Leave about ¼ of the ladle height a foam clearance. Add 1-2 tablespoons of cold sugar water to the top of the cake pans to prevent release. Bake on bottom rack in oven at 150 degrees for about 2 ½ hours.
Mämmi will taste best in a few days. Serve cold with cream, cream milk, custard or ice cream.
TIP: You can omit the syrup, then the Mämmi is not so sweet.
